Fillet of Sole or Haddock Turbans
Fisherman’s Market Int’l. Inc. “Fish-epies”
Ingredients:
1 or 2 Small fresh fillets rubbed with lemon juice
1 or 2 oz. Seabright Smoked Salmon per fillet
2 oz. Unsalted butter
2 tbsp. Chopped chives
1 Clove of garlic
1/2 cup Sour cream
1/2 tsp “Fisherman’s Market Seafood Spice” (Available in store)
1/2 cup Fish stock
1 tbsp. Flour
Wood skewers or Satai sticks
Directions:
Roll the fillets loosely and pin with the sticks. Push the Smoked Salmon down the centre of the roll and place in a shallow oven-proof dish. In a separate frying pan, melt the butter over medium heat and add the crushed garlic and the chives (a single dash of tobasco pepper sauce is great).
Simmer for a few moments. Turn the heat down and slowly whisk in the flour. Add the sour cream and then add just enough of the stock to give a slightly thin sauce. Pour over the rolled up fillets. Cover with foil and bake until done. Serve with the sauce and sprinkle with paprika for added colour.
