Mandarin Fillets


Ingredients:

2lbs. Boston Bluefish* Fillets 1kg.

1-10 oz. Can (284ml) mandarins 1

1 tbsp Cornstarch 15ml

1/2 cup Orange juice 125ml

1/2 cup Seedless green grapes, halved 125ml

Directions:

Cover and microwave fillets at HIGH (100%) for 8-12 minutes. Let stand covered 5 minutes. Drain mandarins and reserve juice. Combine cornstarch with mandarin and orange juice. Cover and microwave at HIGH (100%) for 2 min. Stir. Microwave at HIGH (100%) for 1 min. Let stand covered for 2 min. Serve over poached fillets.

Sauce: 75ml (1/3 cup)
