Nova Scotia Seafood Chowder
Ingredients: 2 cups Lobster meat 500ml 1lb. Fish fillets (haddock, cod, halibut, etc.) 500g 1lb Scallops 500g 1lb Mussels or clams, steamed and shucked 500g 2tbsp All-purpose flour 25ml 4 cups Potatoes, peeled and diced 1l 1 cup Water 250ml 1/2 cup Onions, chopped 125ml 4 cups 10% Cream 1l 3 cups Milk 750ml 1tsp Salt 5ml pinch White cayenne pepper pinch 1/4 cup Butter or margarine 50ml Directions: If frozen, thaw lobster, reserving the lobster juice. Remove any bits of shell or cartilage and cut into bite-sized pieces. De-bone fish fillets and cut into 1-inch (2-cm) pieces. Set aside. In a heavy saucepan, sauté onions in butter until tender. Stir in flour and cook for 1 minute. Add potatoes and enough water to cover, bring to a boil. Cook until tender. Add fish, scallops, and simmer for 5 minutes, stirring once or twice. Add cream, milk, lobster, lobster juice, mussels and seasonings. Heat gently and serve. |
