Chimichurri Grilled Argentine Red Shrimp

Ingredients:

SHRIMP:

  • 1lb Argentinian Peeled & Deveined Red Shrimp
  • 3 TBSP Olive Oil
  • Juice of 1 Lemon
  • 3 Garlic Cloves, minced
  • 1 tsp Smoked Paprika
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper 
  • 1/2 tsp Red Pepper Flakes (Optional)

CHIMICHURRI SAUCE:

  • 1/2 Cup Fresh Parsley (Finely chopped)
  • 2 TBSP Fresh Oregano (Chopped)
  • 3 Garlic Cloves (minced)
  • 1/2 tsp Red Pepper Flakes
  • 1/4 Cup Red Wine Vinegar
  • 1/2 Cup Olive Oil
  • Salt & Black Pepper to Taste
Instructions:

In a bowl, mix olive oil lemon juice, garlic, smoked paprika, salt, black pepper, and red chili flakes (if using). Add the shrimp and toss to coat. Let the shrimp marinate for 15-30 minutes. 

In another bowl, mix parsley, oregano, garlic, red chili flakes, red wine vinegar, olive oil, salt and pepper. Let set when shrimp cooks. 

Preheat your grill, or if using a pan, to medium heat. Thread shrimp onto skewers and grill for approximately 2 minutes per side until opaque and lightly charred. 

Drizzle with sauce, and serve with extra sauce on the side - enjoy!
