Ingredients:
- 1 Pound of (26-30 Count) Raw, Peeled & Deveined Shrimp
- 1 TBSP Butter
- 1 TBSP Olive Oil
- Salt & Pepper
SALAD:
- 1 1/2 Cups Cucumber, chopped
- 1/2 Cup Red Onion, chopped
- 1 Cup Red Bell Pepper, chopped
- 2 Medium Avocados, peeled, pitted & chopped
- 1 TBSP Parsley, chopped
- 2 TBSP Lemon Juice
- 4 TBSP Olive Oil
- Salt & Pepper
Instructions:
- Thaw out shrimp, pat dry any excess liquid.
- In a skillet, heat butter and olive oil over medium-high heat. Add shrimp seasoning with salt & pepper. Fry each side until cooked through.
- In a large bowl, add cucumber, red onions, bell pepper, avocado, and shrimp
- In another bowl, pour the freshly squeezed lemon juice, olive oil, salt and black pepper. Whisk everything together until combined.
- Pour over salad & enjoy!
