Shrimp Avocado Cucumber Salad

Ingredients:
  • 1 Pound of (26-30 Count) Raw, Peeled & Deveined Shrimp
  • 1 TBSP Butter
  • 1 TBSP Olive Oil
  • Salt & Pepper

SALAD:

  • 1 1/2 Cups Cucumber, chopped
  • 1/2 Cup Red Onion, chopped
  • 1 Cup Red Bell Pepper, chopped
  • 2 Medium Avocados, peeled, pitted & chopped
  • 1 TBSP Parsley, chopped
  • 2 TBSP Lemon Juice
  • 4 TBSP Olive Oil
  • Salt & Pepper
Instructions:
  • Thaw out shrimp, pat dry any excess liquid. 
  • In a skillet, heat butter and olive oil over medium-high heat. Add shrimp seasoning with salt & pepper. Fry each side until cooked through.
  • In a large bowl, add cucumber, red onions, bell pepper, avocado, and shrimp
  • In another bowl, pour the freshly squeezed lemon juice, olive oil, salt and black pepper. Whisk everything together until combined. 
  • Pour over salad & enjoy!
