
Ingredients:
- 1lb Salmon Skin-Off Fillet
- 1 Cup Mozzarella Cheese, grated
- 2 Garlic Cloves, peeled & pressed
- 2-3 TBSP Mayonnaise
- 1 tsp Mustard Powder
- 1/2 tsp Paprika
- 1/2 tsp Fresh Ground Black Pepper
- 1/2 tsp Salt
- 1/4 Cup Small Bunch of flat leaf Italian Parsley, chopped
- 1/2 Cup Panko Bread Crumbs
- 1/4-1/3 Cup Grated Parmesan Cheese
- 1 TBSP Unsalted Butter, melted
Instructions:
- CRUST- Combine 1/2 Cup of panko bread crumbs, 1/4-1/3 Cup of grated parmesan cheese, and 1 TBSP of butter together in a bowl. Stir until the butter coats the crumbs evenly. Set aside.
- Wash & Dry parsley before chopping into fine pieces.
- Rinse salmon off under water, and pat dry. Cut into 1 inch cubes.
- Stir spices together.
- Add spices, parsley, pressed garlic, mayonnaise, and 1/2 of the mozzarella cheese to the salmon cubes. Stir to even out the ingredients.
- Preheat oven to 425°F with the baking rack set into the middle of the oven.
- Transfer the mixture to an oven proof baking dish (suggested size 9" x 6") and flatten the salmon mixture. Sprinkle the top evenly with reserved mozzarella cheese, then the breadcrumb mixture.
- Allow to bake from 5-7 minutes uncovered, then once the bread crumbs are golden in color, loosely cover with foil and bake until the salmon is baked through in the middle of the dish.
- Remove from oven & serve!
