Cheesy Parmesan Crusted Salmon Bake

Ingredients: 
  • 1lb Salmon Skin-Off Fillet
  • 1 Cup Mozzarella Cheese, grated
  • 2 Garlic Cloves, peeled & pressed
  • 2-3 TBSP Mayonnaise 
  • 1 tsp Mustard Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Fresh Ground Black Pepper
  • 1/2 tsp Salt
  • 1/4 Cup Small Bunch of flat leaf Italian Parsley, chopped
  • 1/2 Cup Panko Bread Crumbs
  • 1/4-1/3 Cup Grated Parmesan Cheese
  • 1 TBSP Unsalted Butter, melted
Instructions:
  • CRUST- Combine 1/2 Cup of panko bread crumbs, 1/4-1/3 Cup of grated parmesan cheese, and 1 TBSP of butter together in a bowl. Stir until the butter coats the crumbs evenly. Set aside.
  • Wash & Dry parsley before chopping into fine pieces. 
  • Rinse salmon off under water, and pat dry. Cut into 1 inch cubes.
  • Stir spices together.
  • Add spices, parsley, pressed garlic, mayonnaise, and 1/2 of the mozzarella cheese to the salmon cubes. Stir to even out the ingredients.
  • Preheat oven to 425°F with the baking rack set into the middle of the oven. 
  • Transfer the mixture to an oven proof baking dish (suggested size 9" x 6") and flatten the salmon mixture. Sprinkle the top evenly with reserved mozzarella cheese, then the breadcrumb mixture.  
  • Allow to bake from 5-7 minutes uncovered, then once the bread crumbs are golden in color, loosely cover with foil and bake until the salmon is baked through in the middle of the dish. 
  • Remove from oven & serve!
